A delicious frittata
My husband came home from Driver’s Market in Sausalito the other day with a new product I had never seen before- Kuku, a vegan Persian frittata made of kale, almonds and chickpea flour. It was such a terrific mid-day snack! Very filling with the perfect bit of crunch from the almonds.
I googled it, and Kuku Sabzi is a traditional Persian frittata dish full of herbs, but normally made with eggs as the binder. In this vegan version, chickpea flour is used instead, which means these frittatas do fall apart, and are best eaten with a fork.
