JUST Egg
One thing I hear a lot from vegans is how much they miss eggs. I was never much of an egg person, so it wasn’t a huge loss for me at breakfast. However, egg happens to make a hidden appearance in hundreds of recipes….so I am thankful for JUST eggs.
For those of you that love a morning scramble- you are in luck! This mungbean-based product tastes so close to real eggs that even my egg-loving husband will eat it without complaint. Add spinach, mushrooms, avocado and some smoked gouda and you’ve got yourself a scramble that will wow your guests.
I mainly use JUST eggs when I need it for a batter. Whether it is savory kimchi pancakes or a tempura batter- this is an excellent substitute for real eggs. Because it was created to replicate egg whites + yolk, it would likely not work well for a baking recipe that calls for only egg whites.
JUST eggs can be found at every major Marin grocery store- often kept right near the chicken eggs.
