Plant-Based Scallops
While I normally stick to whole foods, I do purchase new plant-based versions of traditional animal products to try at least once. I want to support the entrepreneurs who are striving for a more compassionate and climate-forward future!
I purchased these Mind Blown scallops because the packaging was so cute, and because I used to love scallops seared in brown butter with a squeeze of lemon back in the days when I ate seafood. I browned these in Miyoko’s Oat Milk butter and a bit of olive oil in a very hot pan, then finished with lemon.
All I can say is….I REALLY WAS MIND BLOWN! These little konjac “scallops” are extremely close to the real thing, especially in texture. I served it with a giant salad and some garlic bread and dinner was DONE!
