Revolutionary! Liquid Mozz for Pizzas
I am a huge fan of Miyoko Schinner of Miyoko’s Creamery. She has been a forward-thinking animal advocate for decades, and she launched the artisanal vegan cheese market. She even started a farm animal sanctuary, Rancho Compassion, in Nicasio! She is just incredible.
She also makes incredible products- like her newly released liquid mozzarella. Sounds odd, but it makes perfect sense. The ingredients used to keep cheese shelf-stable are exactly the same ingredients that keep vegan cheeses from melting and bubbling. So, Miyoko and team innovated a new product that you drizzle on to pizzas from a bottle….and it really does melt and bubble and stretch!
When I used it, I was a bit timid with my pour, so I did not use enough. They recommend 1/4 cup for a 10’ pizza. I also did not spread it around with the back of a spoon because I was worried it might get too intermingled with the sauce, and I really wanted to be able to taste the cheese. This is a mild mozz, and it is a perfect pizza cheese. Just be sure you give it a fairly generous pour!
