Uchiwa Ramen
If I were forced to select only one type of food from around the world to eat for the rest of my life, it would be Japanese without a doubt. Readers of this blog know that my favorite cookbook is Vegan Japaneasy, and I cook and serve Japanese food often.
We are so lucky to have Uchiwa Ramen in Marin. They specifically feature a vegan ramen on their menu- the Shio Ramen, made with Gluten Free Ramen Noodles, Tofu, Bean Sprouts, Bok Choy, Mushroom, Green Onions and Bamboo Shoots. They also offer the vegetarian ramen which has ramen noodles, vegetarian broth, tofu, soft boiled egg, bean sprouts, spinach, asparagus, corn, green onions, pickled vegetables, and bamboo shoots.
There are so many other tasty treats to order here, but the kale salad can’t be missed. It contains organic baby kale mixed with roasted kale & tossed in a toasted sesame dressing. Raw kale and roasted kale together? Genius!
They have many of the traditional vegan starters found at Japanese restaurants, such as bean sprout salad and cucumber salad, but the other can’t miss here are the Uchiwa fries, which are potatoes wrapped in a crispy shell served with spicy ketchup. YUM.
